Applesauce Cake With Caramel Frosting
Applesauce Cake is a moist and delicious cake flavored with a variety of spices including cinnamon and nutmeg. A bit of cocoa gives a subtle hint of chocolate. This cake is good by itself but can be made more decadent with a rich caramel frosting. Here is an easy dessert recipe for Applesauce Cake.
2 cups sifted all-purpose flour
2 tablespoons cocoa
3/4 teaspoon salt
1 1/2 teaspoons cinnamon
1/4 teaspoon clove
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 cup soft shortening
1 1/2 cups white sugar
1 1/2 cups applesauce
1 cup raisins, cut up
3/4 cup chopped walnuts (optional)
1/2 cup butter or 1/2 cup margarine
1 cup brown sugar, packed
1/4 cup milk
2 cups sifted powdered sugar (a little more or less as needed)
1 teaspoon vanilla
Preheat oven to 350 degrees. Lightly grease and flour a 9 x 13 baking pan.
In a large bowl, sift together flour, cocoa, salt, cinnamon, cloves, nutmeg, allspice, baking soda and baking powder. Add raisins and walnuts (if using) and toss to coat.
In another bowl, cream shortening and sugar for 2 minutes, then add eggs, one at a time while beating for 2 minutes. Add flour mixture alternately with applesauce while beating. Scrape bowl as necessary, beat only until blended.
Pour mixture into prepared pan and bake for 50 minutes or until toothpick inserted in the center comes out clean. Place pan in a rack and completely cool the cake before frosting.
To make the caramel frosting, melt butter in a saucepan, stir in brown sugar. Cook over low heat for 2 minutes, constantly stirring. Add milk and continue stirring until boiling. Remove from heat and transfer into small bowl. Cool to lukewarm before adding sugar and vanilla. Beat for about 2 minutes until spreading consistency. If mixture is too thick, adjust consistency with a few drops of hot water. If a little runny, add a bit of powdered sugar until right spreading consistency is reached. Spread frosting on top of Applesauce Cake.
